Sakana Restaurant in Takayama serves seasonal cuisine. Most of dishes are made from local products such as highly acclaimed Hida-Beef, also we go into the mountains by ourselves to get wild ingredients. In this diary, I'd like to make some notes of seasonal food and scenes of Hida area.

Our curry roux for 'Beef curry' used very little spices so as not to destroy the taste of the meat.

These are 'Hida beef tendon curry'. It's a different from 'Hida beef curry'.

The process to make the fond de veau is the same, but this curry roux uses more spices and hidden flavors to create a complex taste.
